Stories fill the whole phone screen in a 9:16 frame, 1080 × 1920 pixels. A normal photo is much wider than that, so it has to be cropped hard or placed on a background.
"Crop to fill" makes the photo cover the screen, keeping its centre. "Fit" keeps the whole photo with bars above and below, the usual look for sharing a landscape shot.

Where should I keep text?

Can I use a colour instead of black bars?
The fit mode here adds neutral bars. For a coloured or blurred background, remove the background first or add the bars in a design app.
